From the lush highlands of Antioquia in Colombia, this Yellow Honey lot from Finca Los Cedros showcases the nuanced sweetness and vibrant clarity that honey-processed coffees are known for. In the cup, expect a harmonious profile of tropical fruit brightness and honeyed sweetness, with hints of cherry and caramel, flowing into a creamy, smooth body and a lively, balanced finish.
Grown at elevations between 1,900–2,100 masl in rich Andean soils, these Castillo-variety beans benefit from cool mountain climates that encourage even maturation and nuanced flavor development. After careful hand-picking, the cherries undergo a 168-hour fermentation with honey drying, leaving mucilage on the beans to enhance natural sugars and body.
At Finca Los Cedros, thoughtful farming and processing techniques—blending traditional practices with innovation—bring out a vibrant cup that’s approachably expressive. The honey process uses less water than a traditional washed method and allows the beans to develop complex sweetness, making this lot an inviting expression of Colombia’s evolving specialty coffee culture.
With its sweet tropical character, gentle fruit notes, and smooth finish, this Colombian Yellow Honey is a delightful and balanced coffee that highlights both terroir and process.
