Chiapas is one of Mexico’s most important coffee regions, producing a cup that is both comforting and complex. Grown by smallholder farmers across the Sierra Madre highlands, this Strictly High Grown (SHG) coffee develops depth and sweetness in the cool mountain climate and fertile volcanic soils.
The washed process highlights Chiapas’ hallmark clarity: a chocolate-forward profile with balanced sweetness, gentle nuttiness, and dried-fruit undertones, rounded out by a touch of citrus brightness. The result is a clean, versatile coffee that shines brewed black yet pairs beautifully with milk.
